Villeplet's apple cider 2020 and 2021 are made from apples from Heim and Aure. Generous apple tree owners have given us permission to harvest the apples, and we have picked, milled, pressed, fermented and bottled them, completely without additives. The fermentation has taken place with wild yeast, which is found naturally on the apples. The cider of 2020 is fermented in steel tanks from October 2020 to the summer of 2021 and was then stored on the lees from the fermentation until autumn 2021. Then it was moved to a new tank to remove as much of the lees as possible before bottling on 27 August. Since then, it has been bottled in the old potato cellar at Vikan, now converted into cider storage. It has got its bubbles from secondary fermentation in the bottle, in the same way as champagne and craft beer. When secondary fermentation takes place in the bottle, there is also natural sediment in the bottle. We therefore recommend leaving the cider upright in the fridge 1-2 days before serving, and pouring carefully when it is nearing the end of the bottle, if you want to avoid turbidity in the glass.

Many of the trees we have picked are old, great, beautiful apple trees that are a bit forgotten where they stand. At the time they were planted, it was important to be able to store the apples well into the winter, and people also valued properties that made them suitable for cooking. These apples are less aromatic and often have higher acidity than today's store-bought apples. This makes the must suitable as an accompaniment to food, both as alcohol-free apple cider and as a fermented side. The cider has no added sugar and is completely dry with high acidity. It goes particularly well with Norwegian home cooking with dishes such as lamb's cabbage, roast pork, meat soup and ribs, but the apple sider is suitable for many types of food. It has the same range of use as a flavorful white wine or a medium-light beer. Due to the fact that the name sides is unfortunately not a protected designation, it is important for us that you know that Villeplets sides are completely free of sugar and additives. It is therefore not similar to the sides many know as Swedish box sides, but more like sparkling or light beer with an apple flavour.
