A semi-dry, fresh and acidic cider. Goes well with smoked salmon, fish soup, cured ham, and asparagus. The story of the farm helper: In addition to what they have grown on the farm, the farmers have used the Hardanger plateau for food. They have hunted reindeer and caught trout. When most of the apples were harvested and sold, they picked the rest of the fruit and pressed it into juice. Some of the juice was boiled with sugar, bottled, and enjoyed throughout the winter. The rest of the raw juice was made into cider, which was ready in spring.
